Pastis is a French speciality, an alcoholic beverage aromatized with anise. The alcohol content is 45 percent by volume. The word "pastis" derived from the Provence meaning "mixture". The pastis is similar with the ouzo in Greece and the raki in Turkey.
By the prohibition of the absinthe Pernod modified his recipe. The wormwood was replaced by anise, combined with seeds of fennel and other herbs. It is drunk diluted with of water, so it comes to a luminesance by precipation from anethole.
